Fridge Surprise: Apple and Apricot Tart Recipe

It drives me crazy when Miss Logical and Master Mayhem assure me they can eat a massive Granny Smith apple on their own and then every time I am left with half-eaten apples in the fridge.

So I was quite chuffed with myself when I took a couple of uneaten apples and some frozen puff pastry and made a dessert. I then went a little step further with the leftover pastry and some forgotten dried apricots for a bit of variety.

Ingredients

  • 1 x apple sliced
  • 1 x sheet puff pastry
  • 1 x tablespoon butter melted
  • Icing sugar for dusting

Instructions

  1. Let the pastry defrost and then fork all over the base
  2. Slice the apple
  3. Lay the apples on the pastry
  4. Brush the edges of the pastry and the apples with melted butter

  5. Bake in the oven for approx 40 minutes or until golden
  6. Sprinkle with icing sugar and serve by themselves or with ice-cream

  7. If you have some leftover pastry, fork the pastry as above and lay dried apricots in the middle. Fold over the pastry and crimp the edges

  8. Brush the pastry with melted butter and bake in moderate oven for approx 40 minutes or until golden
  9. Sprinkle with icing sugar and serve by themselves or with ice-cream
